Curried Rice
1/2 cup chopped onion
1/2 cup thinly sliced celery
4 tsp curry powder
3 TBL butter
2 cups long grain rice
4 cups water
1/4 cup golden raisins
4 tsp chicken or vegetable bouillon granules
1/2 cup coarsely chopped cashews
In a saucepan cook onion, celery, and curry powder in butter until celery is tender but not brown. Add rice. Stir in water, raisins, and bouillon. Cover pan and bring to boiling. Reduce heat; cover and simmer 15 minutes or til rice is done. Let stand, covered, for 10 minutes. Just before serving, stir in the chopped cashews and toss lightly to mix. Serves 6
