White Chile
1 lb white beans, soaked overnight and drained
6 cups chicken broth
2 cloves garlic , minced
2 onions, diced
1 small can chopped green
2 teaspoons cumin
2 teaspoons oregano
1 teaspoon cayenne pepper
4 cups cooked chicken, shredded or diced
3 cups grated Monterey Jack cheese
Combine beans, chicken broth, garlic and onions in a large pot, and bring to a boil. Reduce heat and simmer for 3 hours. Add remaining ingredients, with exception of the cheese, and simmer an additional hour. Serve and garnish with cheese.
