Spanish Fried Eggs with Bread Cubes
1 tsp garlic powder
6 slices day old bread, cubed
6 extra large eggs
salt & pepper to taste
Heat oil with garlic powder in a 9-inch skillet. Saute bread cubes in hot oil until golden brown. Break eggs over this. Lower heat, cover, and cook slowly until eggs have set, but are not hard-cooked. Sprinkle with salt & pepper. Garnish with paprika. Remove eggs carefully from pan, having a layer of bread cubes attached under each serving. (Also nice with a bit of shredded Cotija cheese put on top at the end)
